The colorful medley of sliced bell peppers adds an extra level of appeal to this Italian chicken pasta dish. Try substituting Italian sausage for the chicken for a different take on the meal.

6 boneless skinless chicken breast halves, 4 ounces each
1 jar (26 ounce size) garden-style spaghetti sauce
1 medium onion, sliced
1/2 small green bell pepper, julienned
1/2 small yellow bell pepper, julienned
1/2 small red bell pepper, julienned
1/4 cup grated Parmesan cheese
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon black pepper
4 1/2 cups uncooked spiral pasta
Place chicken in a slow cooker. In a large bowl, combine the spaghetti sauce, onion, peppers, cheese, garlic, oregano, basil, salt and pepper. Pour over chicken.
Cover and cook on low for 4 to 5 hours or until a meat thermometer reads 170 degrees F.
Meanwhile, cook pasta according to package directions and drain. Serve chicken with pasta and sauce.

I make this meal at least once a month for my family. Even my 6 year old loves it!! It is healthy and easy to prepare and because there are only 3 people in my family we always have leftovers, and they are delicious! This is also good served with rice if you're not in the mood for pasta.
