Keeping a can of frozen orange juice concentrate in the freezer means you can make more than just orange juice. Try it in a variety of orange-flavored recipes.

Add a little zip to your morning eggs. Eggs, cream, and dill are scrambled with green onions and smoked salmon.

8 eggs
3 tablespoons cream
1 tablespoon chopped fresh dill
1/2 teaspoon salt
4 tablespoons butter
4 green onions, white and green parts, thinly sliced
6 ounces thinly-sliced smoked salmon, cut into strips
Add the eggs, cream, dill, and salt to a bowl. Beat well with a wire whisk.
Melt the butter in a skillet over medium heat. Add the green onions and cook, stirring, for 5-6 minutes or until softened.
Add the egg mixture to the skillet. Cook, stirring, for 3-4 minutes or until almost set.
Stir in the salmon and cook for another minute or two or until the eggs reach the desired consistency.
Serve immediately.

This was quite good, but just a tad on the salty side because of the amount of smoked salmon. We'd actually use just a little less next time but it's a keeper of a recipe otherwise.
