An easy way to pack in flavor and texture in your scrambled eggs through the use of fresh, delicious red bell peppers and onions.
1 teaspoon olive oil
1/2 cup diced red bell pepper
4 tablespoons diced Vidalia or other sweet onion
4 large eggs
salt, to taste
freshly ground black pepper, to taste
2 tablespoons chopped fresh parsley
Heat the oil in an 8-inch nonstick skillet over medium-high heat.
Add the bell pepper and onion. Cook, stirring frequently, for 2 minutes or until just soft. Remove the vegetables to a small bowl and set aside.
Wipe out the skillet and lightly spray with non-stick cooking spray. Return the pan to the heat.
In a bowl, whisk the eggs, salt, and pepper together. Add the eggs and vegetables to the skillet. Cook, stirring constantly, until the eggs begin to set.
Add the parsley and cook, stirring occasionally, until the eggs are cooked. Serve immediately.

HAVE BEEN MAKING THIS RECIPE FOR DINNER,SOMETIMES, AS WELL AS BREAKFAST.LOVE IT. VERY SATISFYING AND NOT HIGH IN CALORIES, EITHER.
I'm a vegan so don't want to compromise your rating averages - but wanted to say, it sounds very simple but yummy for my hubby. he loves omelets filled with cheddar cheese, onions, r & gr peppers, mushrooms etc. (he makes) but they are quite big and very filling. this sounds quick enough for small lunch with lettuce and tomato on side
Substituted Dill for parsley...even better.

I know it's just scrambled eggs, but I liked this recipe. The flavors were fresh and simple - and it was easy to make. We have eggs a lot for breakfast so I'm always looking for new ways to dress them up.
