4 tablespoons butter
2 tablespoons all-purpose flour
1 cup sour cream
24 eggs
3/4 teaspoon salt
1/8 teaspoon white pepper
Optional Toppings
1 cup crumbled cooked bacon
1 cup shredded cheddar cheese
1 cup sliced ripe olives
1 cup sliced green onions
1 cup chopped cooked shrimp or crab meat
Melt half the butter in a saucepan over medium heat. Stir in the flour and cook until bubbly and smooth. Remove the pan from the heat and stir in the sour cream. Return the pan to the heat and cook, stirring constantly, until smooth and thickened. Remove the pan from the heat and set aside.
In a bowl, whisk together the eggs, salt, and pepper until uniform in color.
Melt the remaining butter in a large skillet over medium heat. Add the eggs and turn the pan to coat it with the eggs. Let cook, gently lifting the cooked portion of the eggs to let the uncooked flow underneath. Cook until the eggs are just barely set.
Remove the pan from the heat and stir in the sour cream mixture, gently scrambling the eggs.
Divide the eggs between individual serving plates. Top with desired toppings and serve immediately.
