Classic French salad dressing is sort of a creamy vinaigrette made with eggs, vinegar, oil, and seasonings.
serves/makes:
ready in: under 30 minutes
ingredients
2 eggs, beaten 2 tablespoons water 4 cups sugar (divided) 3 cups white wine vinegar 8 teaspoons dry mustard 8 teaspoons kosher salt 2 teaspoons ground white pepper 2 cloves garlic, minced 3 cups canola oil
directions
Combine eggs with water and 1/2 cup sugar in small, heavy-bottomed saucepan or double boiler. Cook over low heat until mixture reaches 160 degrees F, whisking constantly. Remove from heat and cool quickly by setting pan into bowl of ice water.
Combine with remaining ingredients in blender and process until smooth.
Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.
