Burgers
1 pound ground turkey
1 tablespoon chili powder
1 teaspoon cumin
1 small red onion, chopped
1/4 cup cilantro leaves, whole, chopped
1/4 cup chipotle chiles in adobo, minced
1 cup grated lowfat cheddar cheese, for topping
Caramelized Onions
2 tablespoons olive oil
2 large onions, very thinly sliced
1/4 teaspoon salt
1/4 teaspoon coarsely ground black pepper
1/4 cup beef broth
1/2 cup barbecue sauce
2 tablespoons balsamic vinegar
For burgers: In large bowl, gently combine all ingredients except cheese, using your hands. Form into patties, each 3/4-inch thick.
Lightly oil grill or a skillet over medium-high heat and cook the burgers to desired degree of doneness, at least medium, 4-6 minutes per side.
For the onions: Heat the olive oil in a large skillet over medium-high heat. Add onions, salt, and pepper and cook, stirring often, until onions are browned, 7-10 minutes.
Add broth, barbecue sauce, and vinegar. Reduce heat to low and simmer until the sauce thickens, about 15 minutes.
Top the burgers with Caramelized Onions and the cheese, wrapped inside a warm flour tortilla.

Fantastic!! This recipe is FULL of flavor and is actually pretty easy to make. You can adjust the amount of chipotle in adobo if you don't like things spicy, but we loved it as written.
