Blueberry Dessert Dumplings

ingredients
2 pints fresh or frozen blueberries
1/2 cup sugar, PLUS"PLUS" means this ingredient in addition to the one on the next line, often with divided uses
2 tablespoons sugar, optional
1/2 cup water, warm if using frozen blueberries
2 tablespoons instant tapioca
2 cups all-purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
4 tablespoons unsalted butter, chilled
1/2 cup milk
1 large egg
2 tablespoons light brown sugar
directions
In a 3 1/2 quart crock pot, combine blueberries, the 1/2 cup sugar, the water and tapioca. Cover and slow cook until the berries have formed a thick sauce, 5 to 6 hours on low.
In a medium bowl, whisk flour, the remaining 2 tablespoons granulated sugar, baking powder and salt to combine. Using a pastry blender or two knives, cut in the butter until the mixture resembles coarse meal.
In small bowl, beat milk and egg together. Stir into flour mixture to form a soft dough. Turn your crock pot setting to high. Drop the dough by tablespoonfuls on top of the blueberries. Cover and cook until the topping is firm and a toothpick inserted in the center comes out clean, about 30 minutes.
Sprinkle the dumplings with the brown sugar. Let the dumplings stand for 5 minutes before serving, then spoon into individual bowls.

This recipe is HEAVENLY! smells amazing while it cooks too. I was glad I used my oval crock pot though because you need more surface space to spread out the dumplings. If you use a round crock they are usually taller so they are the same quart size but the diameter won't be big enough to hold all the dough in an even layer and it might not cook evenly. I did have a little dough left but didn't try to add it all or it probably wouldn't have cooked through.

The dumplings took a little longer than 30 minutes to cook but that might have to do with how big they are. Maybe they should have been smaller (I didn't use an actual tablespoon to measure so maybe I made them too big). once they were cooked they were really good. The blueberry part is quite good. I did add some vanilla to it though.

Oh my gosh this blueberry dessert dumpling is absolutely delicious! I am so going to make another crockpot of it right now, it's that good. I give this recipe a 10+.
