Thousand Island has a thousand uses. Whether you're using this creamy dressing to top piles of greens or meaty sandwiches, adding a mashed hard-boiled egg is a great trick for a thick dressing.

1 hard-boiled egg, peeled
1/2 cup mayonnaise
1/4 cup milk
2 tablespoons ketchup
2 tablespoons hamburger pickle relish
1 tablespoon finely chopped green or red bell pepper
1 tablespoon finely chopped onion
salt and pepper
Place the hard-boiled egg in a bowl. Mash well with a fork. Stir in the mayonnaise, milk, ketchup, relish, bell pepper, and onion. Mix well.
Adjust seasoning as needed with salt and pepper.
Use immediately or store in a covered container in the refrigerator for 1-2 days.

Great flavor, but the recipe, without milk, was a bit thin. We used it on Reubens, and wished it had been thicker. But I'll likely make it again.
