1 large onion, coarsely chopped
1/2 teaspoon garlic powder
1/2 teaspoon dried crushed red pepper
1/2 teaspoon dried thyme
1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1/4 cup dark rum
2 tablespoons lemon juice
4 lean pork chops (5 ounce size)
Combine the onion, garlic powder, crushed red pepper, thyme, cinnamon, nutmeg, rum, and lemon juice in a shallow plastic container or zip-top plastic bag.
Add the pork chops to the container and turn to coat in the marinade. Cover the container or seal the plastic bag and place in the refrigerator for 8 hours.
When you are ready to cook the pork chops, preheat the oven to 350 degrees F.
Remove the pork from the marinade and discard the marinade.
Place the pork chops in a baking dish and bake at 350 degrees for 30-40 minutes or until done (cook time will depend on the thickness of the pork chops).
