Perky Slow Cooker Pineapple Pork Chops

ingredients
4 pork loin chops, cut 3/4" thick
salt and pepper, to taste
1 cup pineapple chunks, drained, reserving
3/4 cup pineapple syrup from the can
1/4 cup honey
2 tablespoons wine vinegar
1 tablespoon soy sauce
1/2 teaspoon powdered ginger
2 green onions, sliced
1 green pepper, cut in thin strips
1 tablespoon cornstarch, MIXED WITH
1/4 cup water, if desired to thicken
directions
Trim excess fat from chops; sprinkle with salt and pepper. Brown in large skillet. Arrange chops in bottom of crock pot.
Combine remaining ingredients except green onions and pepper strips; pour over chops.
Cover and cook on LOW for 6 to 8 hours. Halfway through cooking add green onions and peppers. Thicken juices with cornstarch mixed with water, if desired.

Easy and tastey. I found that the chops cooked through in much less time than suggested. Mine were falling apart by 6 hours but I'm sure the thickness of the chops will vary the time. Definately would make again. Tasted great served with sweet potatos.
