Baked Pork Chops With Jalapeno Pepper Jelly

ingredients
6 pork chops, 3/4"-thick
2 tablespoons olive oil
salt and pepper, to taste
1 medium white onion, thinly sliced
3 tablespoons freshly squeezed lime juice
1/2 cup jalapeno pepper jelly
directions
Brown pork chops in a heavy skillet with olive oil until golden brown on both sides. Salt and pepper to taste. Remove from pan.
Place a layer of the sliced onion in the bottom of a greased baking dish. Add the pork chops, spread the jalapeno pepper jelly over them and put the remainder of the onions on top. Drizzle with lime juice.
Cover baking dish and bake at 350 degrees F. for 30 minutes. Remove cover and bake an additional 5-10 Minutes.

Honestly this is the best dinner I have ever cooked in my life!!! I am in my fifties. So many layers of flavor and a freshness to it. I used regular shortening instead of olive oil, no lime juice and fresh cracked salt and pepper and red onion instead of white. The chops were so tender and moist yet with the crispness from frying. I served with cauliflower and stuffing and some of the juice seeped into that which was delicious!!! I also used probably 3/4 cup of jalapeno jelly for three chops. My jalapeno jelly also had red, orange and yellow bell peppers in it. Thank you so very much for an awesome recipe!!!
