1/4 cup all-purpose flour
2 cups milk
1 cup freshly shredded Swiss cheese
Whisk together the flour and milk in a saucepan and mix until smooth. Place the pan over medium heat and cook, stirring constantly, until the sauce has thickened, about 8 minutes.
Remove the pan from the heat. Stir in the Swiss cheese and stir until the cheese has melted and the sauce is smooth.
Use the Swiss cheese sauce immediately.
The sauce may separate if reheated. It is best used immediately. To reheat the sauce, place it in a saucepan over medium-low heat. Cook, stirring constantly, until the sauce has heated.
