It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

An easy way to dress up cooked vegetables or pasta. Note: blue cheese can be salty so be sure to taste the sauce before seasoning with additional salt.

1/2 cup heavy cream
2 ounces blue cheese, crumbled
salt and pepper, to taste
In a small saucepan over low heat, heat the cream until it is bubbling at the edges. Add the blue cheese, salt, and pepper.
Cook over low heat, stirring, for 2 to 3 minutes or until the cheese melts. Remove from the heat and serve with vegetables or pasta.

I came across this today and was looking for a way to spice up a left-over steak that was too dry to begin with....I was simply wonderful and did the trick!!!! I will be making this often now, as a bleu cheese fan!!!! Thank You for posting...
