ingredients

1 cup freshly grated cheese
1 tablespoon cornstarch
1/2 teaspoon dry mustard
1 cup milk

directions

Combine the cheese, cornstarch, and mustard in a bowl or plastic bag and mix well so the cheese is coated in the mixture.

Heat the milk in a saucepan over medium heat. Add the cheese and cook, stirring constantly, until the cheese melts and the sauce has thickened.

If a thinner sauce is desired, add additional milk. Use immediately. Store leftovers in a covered container in the refrigerator. Sauce may separate upon reheating.

This sauce works with any meltable cheese such as cheddar, mozzarella, monterey jack, etc. Do not use pre-shredded cheese or it will not melt properly.

recipe tips

For a richer flavor, try using a combination of cheeses such as sharp cheddar and smoked gouda.

If the sauce is too thick after refrigeration, gently heat it while whisking in a bit of milk until it reaches your desired consistency.

Try adding a splash of white wine for extra flavor.

Serve the sauce in a fondue pot or warming dish when using it as a dip to keep it melty and smooth for parties.
