Gorgonzola Cream Sauce

ingredients
2 cups heavy cream
2 ounces creamy Gorgonzola cheese
1 tablespoon freshly grated Parmesan cheese
salt and white pepper, to taste
directions
Place the cream in a medium-sized saucepan and bring it to a simmer over medium heat (be careful, as it can boil over easily). Simmer the cream until it is reduced by half and thickened, stirring occasionally.
Remove the pan from the heat, add the Gorgonzola, Parmesan, salt, pepper and whisk until the cheeses melt.
Serve the sauce immediately.
