Beer-Cheese Sauce

ingredients
3/4 cup shredded cheese
1 tablespoon flour
1/2 teaspoon dry mustard
1 dash paprika
1/3 cup beer
1 teaspoon Tabasco sauce
3 tablespoons milk
directions
Bring cheese to room temperature. Toss with flour, dry mustard and paprika.
In a saucepan, heat beer and Tabasco until just warm. Gradually add cheese mixture stirring constantly until cheese is melted and mixture is smooth.
Use as a dip or spoon over chips for nachos, and so on.

This recipe did not work. It forgets to tell you where to add the milk. We tried a couple of times without success. The cheese ends up a melted blob, with lots of liquid around it. Skip this recipe and try another.
If the heat is too high the cheese can separate like that. Also, I think the milk is supposed to be added if needed to get to the desired consistency. The results could vary by the type of cheese you used as well (you didn't say what kind) and maybe even the type of beer used.
