Ham And Macaroni Casserole

ingredients
7 ounces elbow macaroni
1/4 cup butter
1/2 cup chopped green bell pepper
1/2 cup chopped celery
1/3 cup chopped onion
3 tablespoons flour
2 teaspoons celery seed
1/2 teaspoon salt
1/8 teaspoon black pepper
1 1/2 cup milk
2 cups shredded Cheddar cheese
2 cups diced cooked ham
1 cup cottage cheese
2 eggs, slightly beaten
1/4 cup chopped pimento
directions
Cook macaroni. Drain.
Melt butter in saucepan. Add green pepper, celery and onion and cook over low heat 2-3 minutes. Blend in flour, celery seed, salt and pepper and remove from heat. Stir in milk gradually, then cook over medium heat, stirring constantly, till mixture comes to boil. Cook 2 minutes, stirring constantly. Add macaroni, cheddar cheese, ham, cottage cheese, eggs and pimento. Blend well.
Turn into buttered 2 quart casserole. Bake at 350 degrees F for 30 minutes. Remove from oven and let stand for several minutes. Garnish with parsley.

My kids don't usually love meals that have cottage cheese in them (they will eat it but don't rave about it). This one, they loved! Thanks for a new family favorite!

was excellent,am making it again for a gathering,was even better as a leftover.Used a little white sauce with the leftover.
