7 Layer Ham Casserole

ingredients
2 cups cooked rice
2 cups diced ham
1 package (16 ounce) frozen broccoli, thawed
1 onion, chopped
1 cup milk
1 can (10.75 ounce size) cream of mushroom soup
2 cups shredded cheddar cheese
directions
In 2 quart casserole dish, layer the ham, rice, broccoli and onion. Mix soup, milk and cheese in bowl, pour over layers.
Bake at 350 degrees F for 30 minutes, or until hot and bubbly.

I thought the recipe had entirely too much onion - 1/2 an onion would have been plenty. Next time I'll probably saute the onion before putting it in the casserole to soften it some and mellow the flavor. Other than that, it was pretty good. It needed close to 40 minutes in the oven before it was ready. This is a quick, easy, pretty healthy dish that I felt good about serving to my family.
