Want to know the secret to making the best baked sweet potatoes? You coat them in bacon drippings before baking. If you don't have bacon drippings you can also use butter or oil.

1 sweet potato per person
bacon drippings for coating
butter to serve with hot potatoes at the table

Preheat oven to 350 degrees F.
Scrub the sweet potato with a brush under running water. Let dry then place on a baking sheet.
Coat the entire outside of the sweet potato with bacon drippings.
Place the baking sheet in the oven and bake at 350 degrees F for 45 minutes or until soft and can easily be pierced with a fork.
Serve hot, topped with butter.
