bacon drippings for coating

Preheat oven to 350 degrees F.
Scrub the sweet potato with a brush under running water. Let dry then place on a baking sheet.
Coat the entire outside of the sweet potato with bacon drippings.
Place the baking sheet in the oven and bake at 350 degrees F for 45 minutes or until soft and can easily be pierced with a fork.
Serve hot, topped with butter.
