ingredients
6 medium sweet potatoes
3 tablespoons butter
1/2 cup orange juice
1 teaspoon salt
1 can (8 ounce size) crushed pineapple
1/2 cup pecans, chopped
directions
Bake scrubbed sweet potatoes at 350 degrees F until tender, about 45-60 minutes. Cut strip off top of each potato. Spoon potato out of shell.
Combine sweet potato with butter, orange juice, and salt. Mix well. Stir in pineapple. Spoon back into potato shells. sprinkle with salt. Bake at 375 degrees F until heated through and hot about 12 minutes.

Made this for Thanksgiving today. Added a sprinkling of cinnamon. Did not pack mixture back into skins, as they were really delicate and fell apart easily. But recipe was delicious! I loved, father in law loved, mother in law loved, wife said they were "too orangey", but she has weird tastes (but I love her anyway!)
