Salt Baked Sweet Potato With Butter-Honey Spread

ingredients
1 large sweet potato
bacon drippings, shortening or butter spray
3 tablespoons kosher salt
SPREAD
softened butter
honey
ground cinnamon
directions
Thoroughly coat skin of potato with bacon drippings, shortening or spray with butter spray. Roll each potato in Kosher salt, forming a heavy salt coating.
Place on a baking pan with at least 1" space between potatoes (if making more than one). Bake at 350 degrees F for 45-60 minutes (until soft).
Whip together butter (3 Tbs. per potato), honey (1 to 3 Tbs. per potato, to taste) and cinnamon (about 1 tsp. per potato). Taste and adjust seasoning.
Split potato in half and spread each half with a generous amount of butter mixture. Serve hot.

I baked just one yam for myself. I had to bake it longer than one hour, but it was delicious. The butter, honey and cinnamon mix was awesome! I sprayed the outside with Olive Oil Spray and salted it (before baking)and even the skin was tasty.

We used medium sweet potatoes instead of large and they were not done in the time the recipe states. It took about 30 minutes longer. We'd recommend using a higher temperature. The salt crust shouldn't be affected by that. The honey butter was awesome and it made it worth waiting the extra 30 minutes for the potatoes to be done.
