Easy Baked Sweet Potatoes

ingredients
2 pounds sweet potatoes, peeled and cut into 1/4-inch slices
2 tablespoons grated orange rind
1/4 cup lemon juice
2 teaspoons unsalted margarine
directions
Place sweet potatoes in a single layer on a sheet of aluminum foil. Sprinkle with orange rind and lemon juice, and dot with margarine.
Fold foil over potatoes, and crimp edges together. Tuck ends of foil under to make an airtight package.
Place on a baking sheet, and bake at 400 degrees F for 40 minutes or until tender.
