Baked Sweet Potatoes With Maple Butter

ingredients
1 stick butter, softened
6 tablespoons real maple syrup
4 sweet potatoes, well scrubbed and cut length-wise
directions
Combine softened butter with maple syrup. Put in a small fancy dish and chill.
Heat oven to 425 degrees F. Place cookie sheet in oven to heat.
Remove hot cookie sheet and spray or rub with oil (be careful, it's hot!). Immediately put cut side of potatoes on sheet. Spread them out so none are touching each other and return to oven.
Cook for 25-40 minutes until soft.
Remove with spatula to plate and pass the maple butter. Any leftover maple butter is good on waffles or french toast.
