Twice-Baked Sweet Potatoes With Mini Marshmallows

The flesh from baked sweet potatoes is mixed with milk, buttermilk, butter, salt and pepper and stuffed back into the sweet potato shells and topped with mini marshmallows before baking a second time.

4 whole medium sweet potatoes, pricked on all sides with a fork
1/4 teaspoon salt
black pepper, to taste
1/3 cup buttermilk
1/3 cup milk
4 tablespoons butter, softened
1/2 cup miniature marshmallows

directions

Preheat the oven to 400 degrees F.

Place the sweet potatoes on a foil-lined baking sheet. Place the baking sheet in the oven and bake at 400 degrees F for 1 hour or until tender (timing will depend on size of sweet potatoes so start checking them after 45 minutes or so).

Remove the sweet potatoes from the oven and set aside until cool enough to handle.

Slice each sweet potato in half lengthwise and scoop out the flesh, leaving a 1/4-inch shell. Place the potato flesh in a food processor. Return the shells to the foil-lined baking sheet.

Add the salt and pepper to the potatoes. With the food processor running, slowly add the buttermilk and milk to the potatoes. Add the butter and process until smooth.

Spoon the puree back into the potato shells. Top each with a layer of miniature marshmallows, pressing gently so the marshmallows adhere to the filling. Return the sweet potatoes to the oven and bake for 10-12 minutes or until the marshmallows are brown and puffy and the filling is heated through.

Serve hot.

    These were excellent! I was looking for some kind of different sweet potato recipe for this Thanksgiving, and was happy that I chose this one. Everyone loved them. They seemed lighter (less filling) than other sweet potato recipes. Note: The marshmallows can tend to fuse together in one "unit." So when you stick your fork in, the whole marshmallow block comes off the top. I used a steak knife to slice the whole thing in quarters horizontally, giving you some marshmallow and potato in every bite.
