Baked Sweet Potato With Crumbled Blue Cheese

ingredients
1 sweet potato or russet potato
1 tablespoon butter
1/4 cup crumbled blue cheese, more to taste
1/2 teaspoon chopped fresh herbs
OR
1 pinch dried herbs (such as parsley, fennel, marjoram, dill)
directions
Preheat oven to 425 degrees F.
Thoroughly scrub sweet potato and dry.
Lightly prick potato skin with fork and bake until tender, 40 to 60 minutes.
Cut slit in top of potato approximately three quarters the length of potato. Push in ends of potato gently together, and fluff with fork.
Top with butter, crumbled blue cheese and fresh herbs.
Serve immediately.
