Minced salmon filets are mixed with seasonings and pan-seared then served on buns with cucumbers that have been marinated in a sweet-sour-soy mixture.
Cucumbers
1 tablespoon honey
1 tablespoon soy sauce
1/4 cup rice wine vinegar
1 teaspoon sesame oil
1/4 teaspoon salt
black pepper
1 unpeeled English cucumber, thinly sliced
Burgers
1 1/2 pound uncooked salmon, skinned
1 tablespoon minced garlic
3 tablespoons Dijon mustard
1/2 teaspoon salt
black pepper
2 tablespoons canola oil
4 seeded hamburger buns
For Cucumbers: Combine first 6 ingredients in a bowl. Add cucumber and let marinate 15 minutes. Drain before using cucumbers.
For Burgers: Chop salmon into medium-size pieces, place in food processor in 2 batches, and pulse to dice. Transfer to a bowl. Add garlic, mustard, salt and pepper. Mix thoroughly. Divide salmon mixture into equal portions. Shape into patties.
Heat a large skillet over medium high heat; add oil. When oil is hot, place patties in skillet and cook until browned, 3 to 4 minutes per side.
Toast buns. Top bun bottoms with salmon burgers and soy cucumbers. Place bun tops on and serve.

I loved these salmon burgers because they don't contain filler (bread crumbs, etc) - nothing but delicious salmon! They were very nicely done. They did take more than the 3-4 minutes per side to cook, however, but that may depend on how thick you make them. The soy cucumbers were outstanding and paired perfectly with the salmon. Fantastic recipe!
