Green Onion Butter

ingredients
3 tablespoons butter, chilled
1/3 cup green onions, chopped
1/4 cup fresh parsley, chopped
2 teaspoons fresh lemon juice
1 teaspoon Dijon mustard
4 ounces silken tofu, drained
directions
In a food processor, process butter, green onions and parsley until finely minced. Add lemon juice, mustard and tofu, then puree to soft paste.
Spoon into container. Cover and refrigerate 1 hour to let flavors blend.
