A French classic. This compound butter is filled with parsley and just a hint of lemon flavor. It's perfect on steaks, fish, or vegetables.

1/4 pound sweet cream butter, softened
2 teaspoons fresh lemon juice
1 tablespoon minced fresh parsley
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
Combine the butter, lemon juice, parsley, salt, and pepper in a bowl. The compound butter can be mixed with an electric mixer, if desired, or by hand.
Form the butter into a log shape and roll up in waxed paper or plastic wrap and refrigerate until firm.
To use, simply remove the wrapping and slice off pieces of the beurre maitre d`Hotel.
