1 cup granulated sugar
1 cup water, plus additional if needed
sweet pickled ginger, to taste
1/4 cup rice wine vinegar (or as needed)
Combine the sugar and water in a saucepan over medium-high heat. Bring the mixture to a boil and cook, stirring frequently, until the sugar is dissolved. Stir in the pickled ginger and let the mixture cool to room temperature.
Add the rice wine vinegar and mix well. Adjust the flavor by adding more vinegar or water.
Place the dressing in a covered container and refrigerate for 8 hours or overnight. Remove the pickled ginger before serving.
