Burger-Stuffed Baked Potato

ingredients
6 baking potatoes
1 pound ground beef
2 cans cream of mushroom soup
1 chopped onion
shredded cheddar cheese
directions
Bake the potatoes on 400 degrees F for 1 hour or until tender. While these are baking, brown the hamburger meat and drain fat. Add cream of mushroom soup. Simmer for 15 minutes. Pour this mixture over baked potato and top with cheese and if desired chopped onions.

When we were kids and my dad was left in charge of cooking for us (when mom was out or working) he would make something very similar to this. I think he added canned mushrooms to it but I remember something else too. Made this today and modernized it just a little. I browned the beef and removed from pan. Sauteed onions and then added sherry and reduced it down until gone. Added the beef back and the mushroom soup. Poured over the potatoes and topped with provolone cheese. Dad would have been proud!

This potato Burger is quick easy and delicious. The cream of mushroom soup really gives potato a good flavor. And the cheese puts the icing on the cake
