ingredients
1 pound lean ground beef
2 large onions, sliced
3 medium carrots, cut into 1/4" thick coins
3 stalks celery, diced fine
8 cups beef broth or bouillon
1 head cabbage, shredded
1 can (6 ounce size) tomato paste
3 tablespoons chopped fresh dill or parsley
sour cream
directions
Brown beef in kettle with onion, carrots, and celery. Pour off any fat. Add broth and bring to boil. Stir in cabbage and tomato paste. Reduce heat. Cook covered for about 1 hour or until vegetables are tender. Sprinkle with dill or parsley and serve with sour cream on top.

This is my husband's favorite comfort food. I get the preshredded cabbage that you use for cole slaw and it saves me a mess lol. I've done this with ground turkey too but he prefers the beef since it's heartier. I use low sodium beef broth and parsley (dill? can't quite imagine that going well with this). I add extra carrots and only use one onion.
