This flavorful recipe for beef and barley soup comes from Olivia's Cafe in Disney World's Old Key West resort.

1 tablespoon vegetable oil
1 1/2 pound lean boneless beef, diced
1 1/2 quart low sodium beef broth
3 ounces pearl barley
1/2 cup onion, diced
1/2 cup carrots, diced
1/4 cup celery, diced
1/4 cup red bell pepper, diced
In a Dutch oven, heat the oil over medium high heat. Stir in the beef and brown on all sides. Add the beef broth and bring to a boil.
Add the barley and bring the broth back to a boil. Reduce the heat to a low simmer and cook for 45 minutes.
Stir in the onion, carrots, celery, and bell pepper. Simmer for 20-30 minutes longer or until the barley is tender.
Add salt and pepper as needed and serve hot.

Took the advice and used regular beef broth instead of low sodium because just looking at the ingredient list it seemed like it could be bland. It turned out very good so I too would recommend not using low sodium broth. Even with added salt it usually lacks flavor so go with the richer broth.

This soup really hit the spot on a cold day! I had some leftover brown gravy from dinner the night before so I stirred that in for a little richness. YUMMMMMMMM!

Everything was very tender but it lacked flavor I thought. I wouldn't recommend low sodium beef broth. You need the richer flavor. Beef stock would be even better. Wasn't anything special otherwise.
