A cheesy soup loaded with ground beef, veggies, and of course, bacon!
1 pound ground beef
1 1/2 cup water
2 cups peeled and cubed potatoes
2 small carrots, peeled and grated
1 small onion, chopped
1/4 cup chopped green bell pepper
1 jalapeno pepper, seeded & chopped
1 clove garlic, minced
1 tablespoon beef bouillon granules
1/2 teaspoon salt
2 cups milk
3 tablespoons flour
1/2 cup milk
8 ounces Velveeta cheese, cubed
1/4 teaspoon cayenne pepper
1/2 pound bacon slices, cooked & crumbled
In a skillet over medium-high heat, brown the ground beef. Drain off any excess grease.
In a large saucepan over medium-high heat, combine the water, potatoes, carrots, onion, bell pepper, jalapeno, garlic, bouillon granules, and salt. Bring to a boil then cover the pan and reduce the heat to a simmer. Cook for 15-20 minutes or until the potatoes are soft.
Stir in the ground beef and first measure of milk. Cook until just heated through.
In a small bowl, stir together the flour and second measure of milk until smooth. Stir into the soup. Increase the heat and bring just to a boil. Cook, stirring constantly, for 2 minutes or until thickened.
Reduce the heat and stir in the cheese. Stir until melted then add the cayenne.
Top individual servings with the crumbled bacon.

This is probably the best recipe for Bacon Cheeseburger Soup that I have found. After being in the restaurant business for a few decades, I have acquired quite the picky palate. The only suggestion I have is that everyone should make a double batch. 5 stars...all the way!

Good recipe. I chose to try this one as it didn't have the sour cream as many of the other cheeseburger soups had...it was great. Good tip about thickening with the flour and THEN adding the cheese.

Loved it, made one change, I don't like processed cheese, so didn't use Velveeta, I chopped up a good cheddar (I'm from Wisconsin!) A little caloric, but really good! Thanks for the recipe, Margy
