Keeping a can of frozen orange juice concentrate in the freezer means you can make more than just orange juice. Try it in a variety of orange-flavored recipes.

Chicken burgers aren't just for non-beef eaters any more. The cumin and curry spice blend comes through in these patties in a way it never could with beef, paving the way to new possibilities.
1 pound skinless boneless chicken breast, cut into 1-inch chunks
1/4 cup finely diced onion
1 clove garlic, minced
1 large egg, lightly beaten
1/3 cup seasoned breadcrumbs
1 teaspoon ground ginger
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/2 teaspoon cayenne pepper
1/2 teaspoon curry powder
1/4 teaspoon black pepper
3 tablespoons all-purpose flour
1/4 teaspoon paprika
2 teaspoons vegetable oil
Place the chicken in a food processor (in batches if needed) and pulse process until the chicken is coarsely ground. Transfer the chicken to a large bowl.
Stir the onion, garlic, and egg into the chicken and mix until just combined.
In another bowl, mix together the bread crumbs, ginger, salt, cumin, cayenne, curry powder, and black pepper. Stir the mixture into the ground chicken and mix until just combined. Do not over work the meat.
Form the chicken mixture into patties. Sprinkle each side of the patties with flour and paprika.
Heat the oil in a large skillet over medium-high heat. Add the chicken patties and cook, turning as needed, until browned on both sides and cooked through, about 10 minutes.
Serve the chicken burgers on buns with desired toppings.
You can use pre-ground chicken breast in this recipe but it's usually over-processed and won't hold it's shape as well.

The truth is, I didn't measure the ground poultry accurately (I used turkey,)but I needed to add more eggs. Next time I will measure. I used equal amounts of ginger, curry and cumin. It is delicious.
