Exotic Ginger-Cumin Chicken

ingredients
1 tablespoon vegetable oil
2 pounds boneless chicken breast, cubed
2 teaspoons minced garlic
1/2 cup chopped onion
1 tablespoon finely chopped ginger root
OR
1/2 teaspoon ground ginger
1/2 teaspoon cayenne pepper
1 teaspoon ground coriander
1 teaspoon cumin
1 teaspoon ground turmeric
1/2 cup chicken stock
1 can (19 ounce size) stewed tomatoes
2 tablespoons tomato paste
2 teaspoons sugar
1/2 teaspoon salt
3/4 cup plain yogurt
2 tablespoons chopped fresh cilantro, optional
directions
In large saucepan or Dutch oven, heat 2 teaspoons of the oil over medium-high heat. Add half the chicken and cook 2-3 minutes or until brown. Remove from pan and set aside. Repeat with remaining chicken.
Add remaining oil to pan, add garlic, onion, ginger. Reduce heat to medium and cook, stirring constantly for 4-5 minutes until softened, not brown.
Stir in cayenne, coriander, cumin, and turmeric. Saute for 1 minutes or until fragrant.
Stir in stock, tomatoes, tomato paste, sugar and salt and return chicken to the pan. Bring to boil, reduce heat and simmer for 5 minutes until chicken is cooked through.
Stir in yogurt and cilantro and simmer over very low heat for 1-2 minutes.

This was good, not necessarily exotic, but quite good. And don't let the list of spices scare you off, the yogurt mellows the flavor out quite nicely. There is still lots of flavor but it's well balanced.
