Bacon And Egg Fajitas

ingredients
4 flour tortillas
8 eggs
1/4 cup green onion, sliced
1 tablespoon Dijon mustard
salt and pepper, to taste
2 teaspoons butter
4 ounces Canadian bacon, in strips
directions
Heat tortillas. Whisk eggs, onion, mustard, salt and pepper in a large bowl until blended.
Melt butter in a large skillet over medium-high heat. Add Canadian bacon and cook 2 minutes, stirring occasionally, until just beginning to brown.
Add egg mixture and cook, stirring often, until set. Place egg mixture in the middle of each tortilla. Fold and serve.
