serves/makes:

ready in:
  1-2 hrs

ingredients

3/4 cup tomato juice
1 teaspoon Worcestershire sauce
2 scallions, minced
1 medium tomato, peeled, seeded, and chopped
1 clove garlic, minced
1 tablespoon lemon juice
1/2 teaspoon Dijon mustard
2 dashes Tabasco sauce
salt and pepper, to taste

directions

Combine the tomato juice, Worcestershire sauce, minced scallions, chopped tomato, minced garlic, lemon juice, mustard, and Tabasco in a blender. Process until smooth, scraping down the sides of the blender as needed.

Season to taste with salt and pepper. Chill the dressing for at least one hour before serving. Store leftovers in an airtight container in the refrigerator for up to 1 week. Stir well before serving.

recipe tips

Experiment with adding fresh herbs like basil or cilantro for more flavor.

For an extra tang, try adding lime juice in place of some or all of the lemon juice.

If you prefer a smoother texture, blend the ingredients longer or strain the dressing to remove any solids.

Use this dressing as a marinade for meats to infuse them with flavor before grilling or roasting.

Add a bit of honey or sugar if you prefer a sweeter dressing to balance the acidity.

Make double the batch to have on hand for quick salads during the week.

Store it in a well-sealed jar for easy access and freshness.

Consider using specialty tomatoes like heirloom or organic varieties for a unique flavor.

common recipe questions

Do I use fresh or canned tomato juice?

Canned tomato juice is convenient but tends to be higher in sodium (you can use a low-sodium version). Fresh juice, of course, is the best option but not always a convenient one. Either one will work and the difference won't be as noticeable after all the other ingredients are added.

What can I use if I don't have Worcestershire sauce?

If you don't have Worcestershire sauce, you can substitute it with soy sauce, balsamic vinegar, or a homemade mixture of vinegar and a dash of soy sauce for a similar umami flavor.

How do I peel and seed a tomato?

To peel a tomato, score the skin with an "X," blanch it in boiling water for about 30 seconds, then transfer to an ice bath. After cooling, the skin should peel off easily. Cut the tomato in half and remove seeds with a spoon.

Can I add more heat to the dressing?

You can add more Tabasco sauce, a pinch of cayenne pepper, or use chopped fresh jalapenos or crushed red pepper flakes to increase the spiciness.

How long can I store the dressing?

When stored in an airtight container in the refrigerator, the dressing can last 5-7 days.

Can I freeze the dressing?

Yes, it can be frozen; pour it into freezer-safe containers or ice cube trays for smaller portions, and it will keep for about 2-3 months.

What if I want a creamier dressing?

You can blend in some yogurt, sour cream, or mayonnaise to create a creamier texture while maintaining the spicy flavor.

How do I adjust the thickness of the dressing?

If you want a thinner dressing, add a little water or more tomato juice until the desired consistency is reached. For a thicker dressing, reduce the liquids or add more chopped tomatoes.

Can I make this dressing a day in advance?

Yes, making the dressing a day ahead allows the flavors to meld beautifully, but remember to give it a good stir before serving.

tools needed

Blender: For pureeing the ingredients together until smooth. If you don't have a blender, a food processor or hand blender can work.

Measuring Cups and Spoons: For measuring ingredients like the tomato juice, Worcestershire sauce, lemon juice, and Dijon mustard.

Cutting Board: Provides a stable surface for chopping the tomato and mincing the garlic and scallions.

Garlic Press (optional): For quickly mincing the garlic if preferred to mincing with a knife.

Sharp Knife: Used for peeling, seeding, and chopping the tomato as well as mincing the garlic and scallions.

Mixing Bowl: A bowl can be useful for combining the ingredients before transferring them to the blender, although the blender can also be used directly.

Spatula: For scraping down the sides of the blender while processing, if needed.

what goes with it?

Grilled Shrimp Tacos: The spicy tomato dressing can serve as a zesty topping for grilled shrimp tacos, enhancing the fresh flavors of the seafood with its acidity and heat.

Roasted Vegetables: Drizzle the dressing over roasted vegetables for an extra punch of flavor. The sweetness of the roasted veggies balances the spice in the dressing.

Caprese Salad: Use the spicy tomato dressing as a unique twist on the classic Caprese salad. It adds an unexpected heat that complements the creamy mozzarella and fresh basil.

Pasta Salad: Fold the dressing into a cold pasta salad for a refreshing side dish. The acidity will brighten the flavors of the pasta and vegetables.

Grilled Chicken: Serve the dressing as a marinade or dipping sauce for grilled chicken. The tomato and spices help to tenderize the meat while adding depth to its flavor.

Crispy Tofu: Use the spicy tomato dressing as a sweet-and-spicy sauce for crispy tofu. The creaminess of the tofu balances the tanginess of the dressing.

Baked Potatoes: Use the dressing as a topping for baked potatoes. The richness of the potato pairs well with the tangy and spicy elements of the dressing.

Deviled Eggs: Incorporate the spicy tomato dressing into the filling for deviled eggs. The heat and acidity from the dressing will make this classic appetizer shine.

Chips and Dip: Serve the dressing as a dip alongside tortilla chips or pita chips.

Sandwich Spread: Use the spicy tomato dressing as a spread in sandwiches, especially with turkey or roast beef.
