ingredients
3/4 cup mango chutney
2 tablespoons fresh lemon juice, or more
1 tablespoon peanut oil
1 teaspoon honey
1/4 cup chopped fresh mint
1/4 cup chopped fresh cilantro
salt or soy sauce
lemon zest, to taste
directions
Combine all the ingredients in a blender and puree until smooth. Taste and adjust the seasonings.
Stored in an airtight container, the vinaigrette will keep for 4 to 5 days in the refrigerator. Stir or shake well just before using.
