Lime-Mint Salad Dressing

This dressing is light and refreshing, and perfect for dressing up any salad.
ingredients
1/4 cup lime juice
1 teaspoon salt
1/4 teaspoon white pepper
1 teaspoon finely chopped fresh parsley
1 teaspoon finely chopped fresh mint
1 teaspoon finely chopped fresh chives
1 teaspoon Dijon mustard
3/4 cup olive oil
directions
Mix together the lime juice, salt, white pepper, parsley, mint, chives, and mustard in a bowl.
While whisking, slowly add the olive oil. Whisk until the dressing is emulsified.
Use the salad dressing immediately.

Lately I have been sick of store bought dressings, they just don't seem very healthy and are the same old same old flavors. I had a bit of extra fresh mint on hand and some lime juice, so I search the internet for a dressing recipe containing these 2 ingredients, and stumbled upon this recipe. It was easy to make and So Delicious. The consistency is great, a bit thicker than some others I have tired. I admit I used dried parsley and added onion powder, otherwise I stuck to it. Additionally, the flavors are so unique that it brings new life to another boring salad! Thank you for such a great and new take on salad dressing!
