Asian Lime & Coriander Dressing

ingredients
1/4 cup fresh lime juice
1 tablespoon peanut oil
2 tablespoons coriander, fresh chopped
1 teaspoon sesame oil
1/2 teaspoon sambal oelek or similar
1/2 teaspoon grated ginger root
1 pinch salt and freshly ground black pepper, to taste
directions
Combine all ingredients in screw top jar and shake vigorously.
Serve over hot steamed asparagus, green beans and zucchini. Serve over cold mushrooms, shallots and bell peppers/capsicums.
