Basmati Rice
An aged, long grained rice grown at the foothills of the Himalayan mountains, Basmati literally translated means "queen of fragrance" or "fragrant one". It has a nutty flavor and aroma, and a creamy yellow color. It's common in Indian and Middle Eastern cooking and comes in both white and brown varieties.

Substitutes for basmati rice include jasmine (which will be more fragrant), Texmati (which is a hybrid of basmati and long-grain rice), patna (an Indian rice), or wild pecan rice (a nutty rice from Louisiana also called "popcorn rice").
cooking tips:
Basmati should be soaked prior to cooking. Rinse it several times in cold water then let it soak for 30 minutes. This rinses the excess starch off and helps rehydrate the rice. Since it is aged, it is more dehydrated than some other rice types and the soaking will help it get nice and fluffy when cooked.
