Herbed Basmati Rice

ingredients
2 teaspoons butter
1 cup basmati or other long-grain rice
2 cups water
1/2 teaspoon salt
1/4 cup grated Parmesan cheese
2 tablespoons thinly sliced green onions
1 teaspoon dried basil
OR
1/2 teaspoon fresh thyme
fresh thyme, optional
directions
Melt the butter in a small saucepan over medium heat. Add the rice; stir well. Add water and salt; bring to a boil. Cover. Reduce heat; simmer for 15 minutes or until liquid is absorbed. Stir in remaining ingredients; garnish with thyme, if desired.

I've made this now at least half a dozen times, and my husband and I can't get over how delicious it is...and easy too! The melted Parmesan makes the herbed rice stick together just the right amount. And the house smells delicious just from the basmati rice cooking.

We really enjoyed this dish! I also experimented a little, and added some mushrooms sauteed in garlic and white wine as well, making this a hit at our dinner table!

Easy and delicious! We used herbs fresh from our summer garden and this was a hit! Can be served hot or room temp. A definate keeper!
