Fresh This Season: Parsnips
Parsnips, a member of the parsley family, are available year-round but peak in the fall and winter because they become sweeter after the first frost. The texture of the parsnip root resembles a turnip and the top of the plant is similar to celery. It has a slightly nutty taste.
To store them, refrigerate them in a loosely-closed plastic bag for up to two weeks. The longer you store them, the sweeter they get.
