Crustless Pepperoni Pizza

ingredients
12 slices pepperoni
2 ounces grated Mozzarella cheese
2 tablespoons grated fresh Parmesan cheese
2 black olives, sliced
crushed red pepper flakes to taste
directions
Lay three paper towels on a microwave-safe plate and spread pepperoni slices in slightly overlapped fashion. Sprinkle with mozzarella and Parmesan cheese and olive slices.
Microwave for one minute or until cheese is melted and bubbly. Sprinkle with red pepper to taste.
MOTE: Placing the pepperoni on the paper towels removes most of the oil, resulting in a crispier snack. Remove the towels right away.
