This Italian cheese is so versatile that it can be used in both sweet and savory recipes from cheesecakes to lasagnas.

The perfect recipe to satisfy your pizza cravings. Make these mini pizzas as a quick snack or appetizer.
6 English muffins
1 jar (8 ounce size) pizza sauce (any flavor)
48 slices pepperoni
1 package (8 ounce size) shredded Mozzarella cheese
Split the English muffins gently using a fork. Lightly toast the English muffins and place them split-side up on a microwave-safe plate.
Spread a layer of pizza sauce on each English muffin half. Divide the pepperoni slices between the muffins and sprinkle each with the shredded Mozzarella cheese.
Place the mini pizzas in the microwave and cook on high heat for 2 minutes or until the cheese has melted.
Serve immediately. The mini pizzas can be cut into quarters for appetizer-sized servings.
You can add other toppings as desired.
For added flavor, sprinkle some dried Italian herbs or crushed red pepper flakes on top before microwaving.
Use whole wheat or multigrain English muffins for a healthier option.
If you're using additional toppings like raw vegetables or meats, make sure they're cut small enough to heat through quickly in the microwave.
For a fun activity with kids, prepare the toppings and let them assemble their own mini pizzas before microwaving.
To avoid a soggy base, apply a thin layer of sauce, leaving a small border around the edges.
If you prefer softer English muffins, skip the pre-toasting step.
For a lower sodium option, look for low-sodium pizza sauce and cheese, and choose toppings wisely.
Consider using a microwave crisper pan designed for microwaves if you have one, to improve the texture of the pizza base.
Anything you'd put on a regular pizza! Try browned Italian sausage, bacon, Canadian bacon, mushrooms, green peppers, jalapenos, pineapple, etc.
Yes, the texture obviously will be a bit different but you can use toasted bagels in place of the English muffins.
For a vegetarian version, omit the pepperoni and add vegetable toppings like sliced bell peppers, onions, mushrooms, or olives.
To achieve a crispier base in the microwave, you can pre-toast the English muffins more thoroughly before adding the toppings. However, microwaves generally do not crisp well, so for a crispier texture, consider broiling the mini pizzas in the oven for a few minutes after microwaving.
Yes, feel free to experiment with different cheeses such as cheddar, provolone, or a blend of Italian cheeses for varied flavors and textures.
Leftover mini pizzas can be stored in an airtight container in the refrigerator for up to 2 days. Reheat them in the microwave for 30-60 seconds, or until the cheese is melted and the pizza is heated through.
Yes, you can assemble the mini pizzas ahead of time and refrigerate them until you're ready to microwave and serve. This makes them perfect for quick snacks or entertaining.
Yes, to make them in an oven, preheat the oven to 400 degrees F, assemble the mini pizzas as directed, and bake for 10-15 minutes or until the cheese is bubbly and slightly golden. This method will provide a crispier base and edges.
Using homemade pizza sauce can enhance the flavor of your mini pizzas. You can adjust the seasoning to your preference.
To make sure the cheese melts evenly, distribute it uniformly over each muffin half and try to cover the sauce and toppings completely. Also, arranging the mini pizzas in a circle on the plate can help them cook more evenly in the microwave.

Tasty and easy

I used to make these for my children when they were younger, using my oven toaster. Tried these for my grandkids using the microwave as suggested above and they were just as delicious. They kept asking for seconds and thirds. Thanks so much for this quick method using the microwave to make these mini- pizzas.
