Squid Casserole

ingredients
2 pounds squid, cut in 1/2" strips
2 cloves garlic, chopped
1 large onion, chopped
1 sprig (3 1/2" size) fresh rosemary, finely chopped
16 ounces cold water (or more if needed)
1 small can tomatoes, drained and chopped
4 tablespoons sunflower oil
1 teaspoon tomato puree
salt and black pepper, to taste
1 pinch cinnamon
1 pinch nutmeg
directions
Heat oil and fry onion and garlic until soft, but not turning color. Add rosemary and then squid, mix together then cover with the water. Bring to a boil, then simmer gently (for 45 minutes).
Add tomatoes, tomato puree, salt, pepper and spices. Cover and simmer slowly (45 minutes) or until the squid is tender and the liquid has become a thick sauce.
Serve hot over mashed potatoes or rice, or as a sauce for pasta.
