ingredients
4 calamari steaks
1 medium onion, chopped
4 cloves garlic, chopped or pressed
4 chopped green onions
2 tablespoons olive oil
2/3 cup flour
salt and pepper, to taste
1 tablespoon chopped capers
3 tablespoons butter
1/4 cup fresh lime juice
1/4 cup dry white wine
directions
Saute the onion, garlic and green onion in the olive oil for about 5 minutes or until softened. Remove from skillet and set aside.
Mix together flour, salt and pepper (use more salt and pepper than you would normally season with). Dredge calamari steaks into flour. Saute in butter for about 3-4 minutes per side or until lightly browned.
Add the onion mixture back to the pan. Increase heat to high and add capers, wine and lime juice. Saute for a minute or two while mixing and serve.

This is a good recipe for the beginner. I like it because it told me the basic ingredients and then I just added my own little "flavor" pun intended. You can add a little flavored vinegar to the fish before you cook it to give it a little kick- I also like to cook asparagus, and mashed (Red) potatoes with this. I always start out with my tomato relish on french bread or crackers as an appetizer. Tomato relish- 8 Roma tomatoes, cut in 1/4's then cut the guts out. Dice them in 1/4" squares. Cut up 1 cluster of basil, 4 garlic cloves diced, 1/3 cup of Paul Newman's balsamic vinegar, salt & pepper to taste and a teaspoon of lemon. Let it sit for at least a half an hour. My daughters like it on pasta as well- Cook this for a girl and she will melt in your arms..
