These appetizers might look like normal egg rolls at first, but make no mistake. With mozzarella and pepperoni inside, they're pizza rolls all the way.
cooking oil
1 1/2 cup finely diced pepperoni
1/2 cup pizza sauce
8 ounces shredded mozzarella cheese
48 wonton wrappers
Preheat oil in a deep-fryer or deep skillet to 375 degrees F.
Combine the pepperoni, pizza sauce, and Mozzarella cheese in a bowl. Mix well.
Fill a shallow dish with water.
Spread 6 wonton wrappers, on the diagonal, on a work surface. Place a scant teaspoon of the pepperoni mixture in the center of each wrapper. Brush a light coating of water along the two farthest edges of the wrapper.
Fold the bottom point up over the filling, then fold the sides in. Roll the pizza roll up and seal the end point onto the pizza roll. Set aside on waxed paper while you prepare the remaining pizza rolls.
Place the pizza rolls in the hot oil (in batches as needed) and fry until golden brown. Remove the pizza rolls from the oil and let drain on paper toweling. Serve hot.
Other filling ideas: Cooked and crumbled Italian sausage, chopped bell pepper, chopped mushrooms, chopped black olives, cooked and crumbled ground chicken or turkey, etc.
For extra flavor, saute the pepperoni briefly before mixing it with the cheese to release some of the oils.
Add a dash of crushed red pepper flakes or Italian seasoning to the filling for added flavor.
