2 Fuji apple, chopped
2 Granny Smith apple, chopped
2 tablespoons fresh lemon juice
4 cups chopped cooked chicken breast
1 cup chopped celery
1 cup dried cranberries, chopped
2 cups lowfat or nonfat mayonnaise, more if needed
celery salt and fresh black pepper, to taste
directions
Combine the chopped apples in a bowl and toss with the lemon juice (drain off any excess juice). Toss with the chicken, celery, and dried cranberries. Stir in the mayonnaise until evenly coated, adding more if desired. Season to taste with celery salt and black pepper. You can use regular salt if you wish.
Chill, covered, in the refrigerator for at least one hour (but no more than 3 hours) before serving.
