This is a wonderfully creamy chicken salad that is perfect served on a bed of lettuce or piled on a buttery croissant. Would you expect anything less from Neiman Marcus?

ingredients

1/2 cup heavy cream
2 1/2 cups cubed cooked chicken
1 cup chopped celery
1 cup sliced or halved seedless red grapes
1/2 cup sliced toasted almonds
1 tablespoon minced fresh parsley
1 cup mayonnaise
1 teaspoon salt

directions

Whip the heavy cream until it just thickens and set it aside.

Combine the chicken, celery, grapes, almonds, parsley, mayonnaise, and salt in a bowl. Mix well.

Fold the whipped cream into the chicken salad, mixing until combined.

Cover the bowl and refrigerate for 30 minutes or up to 8 hours. Serve cold on lettuce leaves or croissants.
